Chili crab is one of Singapore’s national dishes. It is a popular dish that can be found in seafood restaurants all over the island. In a nutshell, chili crab is a dish of crabs fried in chili sauce. The sauce has a wonderful mixture of sweet, savory, and spicy flavors. Steamed buns are commonly served with this dish for leftover sauce. Eating chili crabs can be a very messy process, so restaurants often provide a small bowl of water with sliced lemons for customers to clean their hands with.

Q. Does your culture have a practice of eating with the hands?

A. It was quite common for me to see people eating with their hands when I worked in the Malaysia branch. This is because of the Muslim religion in Malaysia. Many people in Malaysia are Muslims and they have a custom of eating with their hands. However, I never ate with my hands even when I tried local food. I would always eat with cutlery. The only time my colleague and I ever ate with our hands was when we went out for seafood dinners. It was always much easier to eat chili crabs or shrimp with our hands than knives and forks.
