Kai Pad Med Ma Muang

Kai pad med ma muang, or stir-fried chicken with cashew nuts, is a fantastic Thai recipe. It has sliced chicken breast, roasted cashew, garlic, onion, sweet bell pepper, red chili, chicken stock, spring onion, oyster sauce, soy sauce, fish sauce, and coconut or brown sugar. It is not an original Thai dish but is a recipe borrowed from the Chinese. Thai chefs substituted peanuts from the original Chinese recipe with cashew nuts. Thailand grows some of the finest cashews in the world, on the island of Phuket.
