Pineapple Cake

Feng li su is a popular Taiwanese pineapple cake that is famous around the world. Square-shaped, feng li su has a buttery, shortbread-like pastry with a pineapple filling. They are often served and gifted during the Lunar New Year. These pineapple cakes are surprisingly pricey, usually more than USD1 each for these small, bite-sized treats. The reason is that making these snacks takes a long time. The key is the crust. The crust needs to be buttery and soft yet at the same time hard enough to hold its form.
