In South Korea, different kinds of vegetables are always served as side dishes with a meal. Most of them are boiled and seasoned with different seasonings. Boiled vegetables, called "namul" in Korean, were thought to help with the digestion of food. For this reason, they became very popular as side dishes. Compared to raw vegetables, a single serving of namul consists of more vegetables because vegetables shrink when boiled. This may be the reason why South Koreans consume the highest volume of vegetables per capita in the world. It is also the secret to the longevity of South Koreans. Over time, namul evolved into tasty dishes that has now become an essential part of traditional Korean meals.
